Once again, Alfredo Cetrone does something unusual and very special here; he places fresh hot chili peppers along with his olives as they go through the crushing process and into the malaxation machine.

Harvest: picked by hand, November thru December
Uses: It adds a zesty, spicy twist to any dish where you want to add excitement; meat dishes, pizza or pasta sauces.
Flavor: The flavor is a hot, tangy and fresh chili pepper blast! Unlike any other “flavored” oils, essence is never used!
